The MAGIC ANTI-INFLAMMATORY SOUP, That Will Keep You Healthy All Summer…….Yes, warm weather is on the way. And you need to be ready to enjoy it! (Not for Sulfite Sensitive)
This Immunity Daal recipe is “an Indian lentil-based soup that’s brimming with anti-inflammatory spices,” she says. “It ups the ante even more by adding coconut milk—one of the best sources of lauric acid that’s anti-viral, anti-fungal, and anti-bacterial.” Not to mention the addition of garlic at the very end tempers the flavor—so it’s not quite so in your face—and provides another hit of anti-bacterial power.
In other words, I’ll be spooning up a batch of this any time I feel a cold coming on—which happens frequently thanks to Mother Nature’s constant mood temperature swings—because by the time it’s warm enough for me to wiggle into a swimsuit, there’s no way I’m going to be stuck in bed. Or I’ll dig in whenever I need to satisfy a spicy food craving, which I’ll admit, happens quite often, too. And since it’s vegan-friendly, gluten-free, and delicious, it’s perfect for hosting people with various dietary restrictions. An all-around winner, if you ask me.
1 onion, peeled and minced
1 tsp coconut oil
1 tsp turmeric
1 tsp ginger
1 tsp mustard powder
1 tsp curry powder
1/2 tsp cinnamon
1/2 tsp cayenne
1 cup lentils
1.5 cups vegetable broth
1.5 cups or 1 can of coconut milk
3 cloves of garlic, minced and left to sit for at least 15 minutes (don’t skip this!)
1/4 cup yogurt of choice (optional, use coconut yogurt if you want to keep it vegan)
In a medium pot, cook onion in coconut oil over medium heat until translucent. Add the spices and cook for 3 more minutes or until fragrant, then add the lentils, vegetable broth and coconut milk. Bring to boil then reduce heat to low and simmer uncovered for 30-45 minutes, or until the lentils are very soft and have absorbed most of the liquid. Turn off the heat, add the garlic immediately and stir (this cooks the garlic enough to mitigate the intensity of the flavor while preserving all of its health benefits). Dollop or swirl yogurt on top and enjoy! Serves 4.
